Lentils curry

I am all for easy when it comes to cooking, so in this recipe I used frozen vegetables and canned (cooked) lentils.

Lentils Curry


  • 4 large onions, cut into slices or rings
  • 3 tablespoons olive oil
  • 250g frozen vegetables or
    • 2 potatoes peeled and cut into small cubes
    • 2 small carrots peeled and cut into small cubes
    • 100g peas
  • 400g brown lentils, cooked and drained
  • Half teaspoon salt
  • Half teaspoon garlic paste
  • Half teaspoon ginger powder or 1 teaspoon ginger paste
  • 2 teaspoons curry powder


    1. If you are not using canned lentils, cook the lentils for 40 minutes in a pot full of water. Do not add salt in the water of lentils, that will delay the cooking process. 
    2. Wash and drain the lentils when they are done. Set aside.
    3. In a separate large pot or pan heat the olive oil.
    4. Add onions, salt, garlic paste, ginger and curry powder. Cook until the onions are brown.
    5. Add the frozen vegetables, or the carrots, potatoes and peas. If using fresh uncooked potatoes and carrots, cook covered in low heat until tender.
    6. Turn off the heat. Add the lentils and stir to mix.
    7. Serve with bread and yogurt if desired.
