Cauliflower and Potato Curry

This is my recipe for cauliflower and potato curry. Serves 4.


  • 1 large onion or 2 small onions - shredded in food processor or finely chopped
  • 1 large tomato or 2 small tomatoes - shredded in food processor or finely chopped
  • 3 medium-sized potatoes - cut into cubes
  • 1 large cauliflower or 2 small cauliflowers - cut in florets
  • 1 tablespoon of curry powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of turmeric
  • 1 teaspoon of ginger powder or ginger paste or fresh finely chopped ginger
  • 1 teaspoon of garlic paste
  • 2 tablespoons of lemon juice
  • 2 tablespoons of olive oil
  1. Heat oil in a large deep pan or pot.
  2. Add the onion, salt, curry powder, ginger, turmeric and garlic paste and fry until the onion is caramelized and the spices are cooked.
  3. Add the tomatoes and fry until it turns into paste.
  4. Lower heat, and add the potatoes and the cauliflower, along with the lemon juice. Stir until the sauce is mixed with the vegetables.
  5. Cover the pot, and let the vegetables fully cook, stirring occasionally.
  6. Serve with pita bread and yogurt.
